I’m wishing you a Happy Deepavali with my almond and coconut energy balls. Almond and coconut energy balls are a delightful alternative to nuts. They are tasty, loaded with protein and fiber, and handy to carry around. I made them during Deepavali, the festival of lights. Deepavali won’t be as enjoyable if there are no sweets to eat, no fireworks, and no lights to decorate your home.
Almond and coconut energy ball ingredients
I want to share with you today these delicious balls that I prepared with almonds and coconut flour. Almonds contain fiber, protein, and healthy fats. They also contain magnesium and vitamin E. Almonds can ease constipation and respiratory problems, lower blood sugar and cholesterol levels, relieve hunger pangs, and aid weight loss. Coconuts are antiviral, antifungal, and antibacterial. They provide fiber content, quick energy, and digestive and heart health benefits, making them an excellent food source. By combining the two ingredients and adding sugar and cardamom powder, I created a delicious bomb that will satisfy your sweet tooth. Finally, a touch of salt enhances the taste. How to make these balls
Preparing this recipe is easy. Toast the almond and coconut flour gradually over low heat. Boil the sugar. Stir and combine the flour mixture. Once it’s manageable, add the cardamom powder, knead it in, and immediately form the mixture into balls. You have just made a protein- and energy-rich takeaway dish. Enjoy! Almond-Coconut laddu
Ingredients
- 1 cup Powdered Almonds
- 1 cup Coconut flour
- 1 cup Raw sugar
- 1 tsp Cardamom powder
- 1 pinch salt
Instructions
- Slow roast the powdered almonds and coconut flour until you get a nutty aroma.
- Take the sugar in a pan. Add 2 tablespoons of water and bring it to boil.
- Mix in the roasted almond and coconut flour.
- Continue to stir until it all starts to come together.
- Add the cardamom powder and generous pinch of salt
- Take it off the stove and dump them into a plate.
- When they are cool enough to handle, knead it well and make lemon sized balls.
- Enjoy!
Notes
- You can make them with whole almonds. Roast them first and then powder them.
- If you want to add some cashews or raisins, feel free to do so.
- You can replace the raw sugar with brown or white sugar or even palm sugar/jaggery.
- Instead of coconut flour, you can also use freshly grated or dried coconut.
- When you take the dough off the stove, don't let it cool too much before shaping the balls. If you do, the balls will crack.
